""1.食品蛋白质加工与综合利用;2.海洋食品组分与营养功效\r1.食品蛋白质加工与综合利用;2.食品风味化学;3.水产品加工副产品综合利用"""【研究领域】\r1.食品蛋白质加工与综合利用方向主要聚焦在食品蛋白质的结构与加工功能关系的研究,特别是水产品蛋白质的生化性质和加工特性研究,在蛋白质变性、凝胶化机理和鱼糜及鱼糜制品品质调控等方面开展了大量的工作,阐明了蛋白质凝胶形成的分子机制,建立了鱼糜品质调控技术。主持国家自然科学基金3项。\r2.水产食品组分与营养功效方向主要聚集在水产原料的营养组分开发和功效关系研究,特别是蛋白多肽等活性物质的功效研究,在胶原蛋白、胶原蛋白肽和活性多肽及活性物质稳态化方面进行了系统研究;在水产品副产物的高值化利用方面开展了活性物质的提取、制备和功能研究,建立了透明质酸提取技术,鉴定出单唾液酸神经节苷酯钠等活性物质;建立了活性物质的W/O/W稳态化包埋体系;建立了多肽酶膜耦合高效制备技术;建立了以细胞和动物为模型的活性多肽构效评价体系。主持国家现代农业产业技术体系专项1项。\r3.食品风味化学研究主要开展传统水产品风味形成机理与控制技术、发酵食品新型发酵剂的筛选和食品优良风味增强技术研究,探索发酵水产品过程中风味物质的形成途径,建立了快速调味酱的快速发酵技术。主持国家自然科学基金1项,江苏省自然科学基金和中国博士后基金各1项。"近期论文
